Using local and sustainably sourced Ontario ingredients, chefs from Canada and around the world will showcase old family recipes and favourite dishes that best reflect their heritage. DaiLo’s features ancient favorites that are up dated to suit the Western palate and the modern demand for local and sustainable ingredients. We call our food Modern Asian Cuisine because it is inspired by Chef Liu’s Hakka background as well as the background of the assembly of talented chefs in our kitchen who bring with them the flavours of Asia.
Nick Liu trained at George Brown’s Culinary Management program, became a Sous Chef at Splendido, and after Executive Chef at Niagara Street Café. Chef Liu has had the honour of representing Canada during the G20 summit in Toronto and The Pan Am Games in Mexico. After leaving Niagara Street Café, Chef Liu is now the Executive Chef and Partner at DaiLo.

Our vision is to present the foods of India from Circa 1526-1947. These were the original foods with flavours and styles as interpreted by the visiting peoples. The Indian peninsula is shaped like a triangle. The influx of the Mughals, the Dutch, the French, the Portuguese and the British influenced the culture and the food of India.
This is not the fancy fusion of contemporary India, but the authentic inter-mingling of the cuisine of India with the cultures of the west.

Today he is president of Slow Food Toronto and executive chef of the new Cucinato Italian Culinary Studio (launching April 2018).

With over 25 years combined in both event management and catering, Chef Daniel Holloway and his ‘Boss Lady’ partner Marie Fitrion, believes great food is achieved by harnessing bold flavours from humble ingredients. Inspired by art, music, and using food as a dialogue for social change, they want to encourage people to broaden their understanding of food and each other with the hopes of building stronger communities.
Their mostly plant-based 'Flexitarian' approach to cuisine, allows them to seamlessly create menus to both omnivores and vegans. Their philosophy is simple: they believe food should unite, not divide people.

Born and bred in Singapore, Elle moved to Toronto 2.5 years ago. She was bowled over by the accessibility of farm fresh local produce. It was in sharp contrast to Singapore where every food/ingredient is imported to the urban island. She scoured the city's many enclaves for spices/ingredients to recreate the authentic flavours of Singapore. She counts herself lucky to be able to make authentic Singaporean food and work with local produce in this new place she calls home. She hopes to raise the profile of Singaporean food and her heritage Peranakan cuisine.

Chef Tsewang Chodon
Head chef Tsewang Chodon is Tibetan-born and raised in Nepal. She had a keen interest in cooking different kinds of food when she was young and was taught by her father, a cook for trekkers in Nepal, and her mother who cooks many different types of food from Tibet and Nepal. She has cooked MoMos at Wychwood Barns and Leslieville Farmers’ Market, and other farmers’ markets in Toronto. MoMos are traditionally served at special occasions, such as the New Year, birthdays, etc.
